Fettuccine with Smoked Salmon

Recipe: Fettuccine with Smoked Salmon

Summary: Serves 6

Ingredients

  • 1 cup sour cream, regular, low fat or fat free
  • 1 cup crumbled feta cheese with sun dried tomatoes and basil, regular or low fat
  • 2 cloves garlic, peeled and chopped
  • 1 jar (12oz) roasted red & yellow peppers, drained and thin sliced
  • 1 package (4oz) smoked salmon, flaked
  • 8 ounces fettuccine pasta, uncooked (1/2 package)

Instructions

  1. In a large bowl, combine the sour cream, feta cheese, garlic, smoked salmon and sliced roasted peppers
  2. Season to taste with salt and black pepper
  3. Set mixture aside
  4. Cook pasta according to package directions
  5. Drain pasta mixture thoroughly
  6. Add hot pasta mixture to sour cream mixture and toss gently
  7. Serve immediately
