Ingredients

  • 1 – 1.25 lbs. mahi fillets
  • Cooking spray
  • Salt + pepper to taste
  • 4 oz frozen orange juice concentrate
  • 4 oz red pepper jelly
  • 1/4 tsp garlic powder
  • 1/8 tsp cayenne pepper

Instructions

  1. Preheat oven to 400 degrees
  2. Place mahi in a sprayed baking dish.
  3. Season with salt and pepper
  4. Bake for about 20 minutes or until the fish flakes
  5. Meanwhile, combine concentrate, jelly, garlic powder and cayenne in a sauce pan and simmer while the fish cooks
  6. Pour glaze over the fish and serve
