Mahi
with Sweet and Spicy Glaze
Summary:
2 Servings
Ingredients
1 – 1.25 lbs. mahi
fillets
Cooking spray
Salt + pepper to taste
4 oz
frozen
orange juice concentrate
4 oz red pepper jelly
1/4 tsp garlic powder
1/8 tsp cayenne pepper
Instructions
Preheat oven to 400 degrees
Place mahi in a sprayed baking dish.
Season with salt and pepper
Bake for about 20 minutes or until the fish flakes
Meanwhile, combine concentrate, jelly, garlic powder and cayenne in a sauce pan and simmer while the fish cooks
Pour glaze over the fish and serve
