Recipe: Neapolitan Octopus Salad

Ingredients

  • 2-4 lbs cleaned octopus
  • 1/2 cup virgin olive oil
  • 2 cloves garlic
  • 4 T chopped fresh parsley
  • 2 T lemon juice
  • salt and pepper

Instructions

  1. Cook the octopus in salted boiling water for between 30-45 minutes
  2. The octopus is done when a fork easily goes into the meat.
  3. Drain the octopus and cut them into small pieces
  4. Season with the olive oil and other ingredients
  5. Let the flavors meld for 2 hours or more before serving so that the seasoning will have time to take full effect
