Ingredients

  • 1-1.25# fresh haddock
  • 1/4 cup fresh grated Parmesan cheese
  • Cooking spray
  • 4 oz angel hair pasta
  • 1 cup loosely packed fresh basil leaves
  • 2 tbsp pine nuts
  • 1 clove garlic
  • 1/4 cup chicken stock
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350
  2. Bake haddock in a sprayed dish for 15 minutes, or until done, topping with the cheese the last 5 minutes of cooking
  3. Meanwhile, cook and drain the pasta according to package directions
  4. Combine the basil, nuts, chicken stock, garlic, olive oil and salt and pepper in a food processor
  5. Pulse until blended into a pesto consistency
  6. Add pesto mixture to pasta and serve with the haddock
