Recipe: Parmesan Crusted
Haddock
with Pesto Pasta
Summary:

Ingredients
1-1.25#
fresh
haddock
1/4 cup fresh grated Parmesan cheese
Cooking spray
4 oz angel hair pasta
1 cup loosely packed fresh basil leaves
2 tbsp pine nuts
1 clove garlic
1/4 cup chicken stock
2 tbsp olive oil
salt and pepper to taste
Instructions
Preheat oven to 350
Bake haddock in a sprayed dish for 15 minutes, or until done, topping with the cheese the last 5 minutes of cooking
Meanwhile, cook and drain the pasta according to package directions
Combine the basil, nuts, chicken stock, garlic, olive oil and salt and pepper in a food
processor
Pulse until blended into a pesto consistency
Add pesto mixture to pasta and serve with the haddock
